My roommate Xiao Lin is a great cook. He's from Sichuan and especially loves making spicy dishes.
Every weekend he cooks one or two dishes for us. Today he said he'd make mapo tofu.
He first went to the supermarket for tofu, chili peppers, Sichuan peppercorns, minced meat, and some seasonings.
After returning, he was busy in the kitchen for about forty minutes. The aroma coming from the kitchen made us all drool.
When the dish was ready, he brought it out — a plate of vibrant red, looking both beautiful and delicious.
I picked up a piece of tofu — numbing and spicy, absolutely delicious. But it was a bit too spicy for me; after a few bites I started sweating.
Xiao Lin laughed: 'In Sichuan, this isn't spicy at all.' The three of us finished the entire plate. I said: 'Xiao Lin, it'd be a waste if you don't become a chef someday.'
